Pink Chocolate Covered Strawberries for a Summer Dessert Picnic

A dessert picnic is a fun and affordable way to enjoy the outdoors as the weather warms up, and pink chocolate covered strawberries are a simple, pretty snack to pack. Summer picnics can be expensive, after adding up the meat, the cheese, the olives, the bread and (most importantly?) the wine. It’s easy to spend a fortune on what’s supposed to be a relaxed meal, but it doesn’t always have to be so elaborate. I have found a way to enjoy an outing with your sweetie or best buds while still being able to afford that new sundress you’ve been eyeing. Put that prosciutto aside for now and pack a pretty dessert picnic!

I once went to a bachelorette party at a vineyard where we sipped raspberry and blackberry dessert wine and nibbled on dark chocolate. This was an incredible combination, and proof that pairing wine with chocolate is not complicated. Sweet wine + chocolate = heaven.

I wanted to create something special for such occasions, romantic or otherwise, and decided on pink chocolate covered strawberries paired with rosé. You could also bring a small chocolate cake or cookies. This is the time to indulge! That’s why picnics are on blankets… so you can take a nap afterward, right?

These blush pink strawberries are so easy to make and would be a lovely treat to take to a 1920s-themed lawn party this summer. They would also be perfect for a baby shower or bridal shower.

I used white chocolate with gel food coloring—instead of the typical semi-sweet or dark chocolate—to create summery blush pink strawberries, then covered them with white sprinkles or coconut flakes. Unsweetened coconut flakes were what I had on hand, but I think sweetened would be better.

And with one additional simple step, you can make beautiful glittery berries. Read on for instructions for both kinds!

Here’s everything you’ll need to make these pretty treats:

(Side note: You’ll see there’s gold dusting powder in the photo of the supplies. I had originally tried painting a few strawberries gold, but I didn’t like how it looked.)

This dessert is deceptively easy to make:

  1. Line a baking sheet with parchment paper.
  2. Wash and dry the strawberries—you don’t want them to be wet when you dip them into the chocolate, or it will cause the chocolate to seize up.
  3. Break up the white chocolate and divide between two bowls. Microwave each bowl in 30 second increments, stirring between until completely melted and smooth. Don’t overheat or the chocolate will burn.
  4. Once the chocolate has melted, add 1 to 2 drops of pink food coloring to one of the bowls and stir until fully incorporated.
  5. For blush pink strawberries: Hold a strawberry by the green stem and twirl in pink chocolate. Immediately sprinkle with coconut flakes or nonpareils. Place on parchment paper until chocolate hardens.
  6. For white strawberries: Twirl the strawberry in the plain white chocolate, then dip a fork in the pink chocolate and move the fork quickly back and forth over the strawberry to create a design.
  7. Once berries have dried, place each one in a mini baking cup. Store in the refrigerator.

For a little more pizzazz, dust the set chocolate with decorating powder:

  1. Start by making pink chocolate strawberries by following the steps above.
  2. In a small bowl, add about 1/4 tsp of the pink decorating powder. Add a small drop of lemon extract. Use the small dusting brush to mix the powder and extract together to form a paste. Add more lemon extract if mixture seems too dry, or more powder if it seems too wet.
  3. Once the chocolate has dried on the strawberries, paint the powder mixture on the chocolate until completely covered. Let dry for about 30 seconds then paint on a second coat.
  4. Once berries have dried, place each one in a mini baking cup. Store in the refrigerator.

Bring a bottle of rosé and relax!
